  • Sourcing philosophy: an eau-de-vie owes nothing but its raw material. This logic agrees with Laurent Gaspard's idea of distillation: the consumption of alcohol finds its best justification in the transparency of the steps leading up to tasting; when the distillate owes everything to the product from which it comes. This is why La Disitillerie du Petit Grain chooses pure products, preferably from organic farming. A strong desire to respect the logic of the terroirs, and a self-prohibition on having a large supply area in order to maintain a strong geographical anchorage, without a heavy carbon footprint.
  • Elaboration: the goal of the Distillerie du Petit Grain is to produce fresh, pure, fragrant eaux-de-vie, devoid of aggressiveness. How ? with modern methods and traditional know-how.
    Laetitia and Laurent Gaspard choose fragrant, healthy fruits at their optimum ripeness. They thus refuse both immaturity and overmaturity and only distill what they would like to eat. Simple rule, but which involves an examination of each fruit.
  • Know-how of the distillery: The still of the distillery comes from the workshops of Mr. Jean-Louis Stupfler whose work is renowned for being present in the most demanding French and foreign distilleries and has received the title of Heritage Company living. This still is open fire, which involves delicate handling, but allows precise toasting and promotes the development of aromas. It is made of copper, exclusively - a guarantee of quality. It is also an obligation for all those who have chosen bio-dynamics (stainless steel, while durable, contains chromium and nickel). The distillates are not filtered. Distillation heads and tails have been carefully removed. Yields are low because only the heating cores are kept.
  • Preparation: The Citrus Gin is a combination of juniper berries, fresh peppers including the famous Sichuan and Timut peppers and citrus fruits carefully chosen from the varieties cultivated by Christophe Comes, starred chef from Perpignan: citrons, yuzus, bigarades, kumquat. It is a marriage of resinous berries from Haut-Languedoc and citrus fruits grown on the shores of the Mediterranean basin.
  • Tasting: very fresh, dense, a little fleshy. On the palate, the attack is delicate but frank with the first slightly bitter citrus notes, followed by a complex aromatic that explodes with notes of pepper and a hint of pleasant acidity.
